PDX's Camas Davis cuts into meat issues

Camas Davis is a butcher who’s not afraid of chopping off a pig’s head and reminding you that meat comes from animals. She opened the Portland Meat Collective, a network of citizens that doubles as a venue for bringing local meat to local people and a butchery school, to help institute a model for meat production she learned in France. The model emphasizes the integrity of the process from feed to table and the integrity of the animal.
